Mango Salsa

With delicious ripe mangoes in abundance during the summer, there are many opportunities to be creative with mango recipes. Like most summer fruits, it is considered cooling in nature according to Oriental Dietary Therapeutics. Mango benefits the Lung, Stomach and Spleen meridians, and is sweet in flavour with a slight sour hint, depending on the variety. It tonifies Yin, resolves accumulated water, clears heat and circulates Qi.
1 mango, flesh finely diced
1/2 Lebanese cucumber, diced into quarters
2 tbsp parsley, minced
2 tbsp mint, minced
1/2 red onion, finely diced
1 lime, segmented and diced
1 fresh jalepeno, finely diced (optional)
Mix ingredients in a bowl. Serve with raw corn chips or stoneground corn chips.
